
Tasty Carrot Muffins
Description
The baking is simple and quick. Carrots are not only healthy and sweet, but also give the baked goods a pleasant, rich orange color. These muffins can be eaten for breakfast, served as an afternoon snack, or taken along for a tasty and healthy treat. The batter works well not only for muffins—you can also use it to make a cake. 1. In a bowl, mix both types of flour, a pinch of allspice, sugar, salt, baking soda, baking powder, cinnamon, and nutmeg.

2. Wash, peel, and grate the apple. Rinse the carrot and grate it on a coarse grater. Chop the walnuts. In a large bowl, beat the eggs, then add the apples, carrots, walnuts, raisins, orange zest (2 tablespoons), honey, vanilla extract, and rapeseed oil.

3. Mix the dry ingredients with the wet ones until smooth.

4. Prepare the cupcake molds by placing paper liners into the molds. Fill the molds with batter, almost to the top of each mold. Place the muffins in a preheated oven at 200 degrees and bake for 20-25 minutes. Check for doneness using a toothpick.
