Instructions

Step 1

1. Prepare the ingredients. The ingredients for the glaze (black currant and powdered sugar) are not needed yet; first, we will prepare the cupcakes.
- 2
Step 2

2. Cut the butter into cubes and place over very low heat until melted.
- 3
Step 3

3. Add sugar to the oil and whisk thoroughly.
- 4
Step 4

4. Add chicken eggs and kefir (I use homemade kefir, which is thick and moderately sour, giving excellent results). Continue mixing with a whisk.
- 5
Step 5

5. Sift the flour to make the dough fluffier, add baking soda and vanilla sugar, and mix the flour into the dough with a whisk. Lift the whisk higher to maximize oxygenating the dough.
- 6
Step 6

6. The dough is ready—smooth, fluffy, aromatic, and of medium thickness.
- 7
Step 7

7. For baking cupcakes, we will use silicone molds, which is very convenient—they don't need to be greased, and the cupcakes won't stick. Preheat the oven to 180 degrees. Fill the silicone molds with batter, but don't fill them completely—no more than half full. Place in the oven for 20 minutes.

Step 8

8. Let the finished cupcakes cool, then remove them from the molds.
- 9
Step 9

9. Prepare the glaze. Blend the currants in a blender, then add powdered sugar until you reach the desired consistency. You can make the glaze thin, like mine, so it drips down, or very thick, so it holds well on the cupcakes.

Step 10

10. Place the cupcakes on a plate.

Step 11

11. Pour over the glaze. Done!
