
Delicious lemon pie
Description
Homemade baked treat for tea. The pie base is made from shortcrust pastry. The filling can be made not only with lemons—limes, oranges, or berries work well too. Serve the pie cooled, dusted with powdered sugar. It pairs perfectly with a cup of green or herbal tea. Serve warm or chilled. Ideal for tea time.

1. Line the baking pan with parchment paper. Preheat the oven to 180 degrees.

2. Mix flour, powdered sugar, 1 tablespoon of lemon zest, and salt.

3. Add 10 tablespoons of butter and mix until crumbly, about 10 minutes.

4. Gather the dough into a single mass, place it in a baking dish, put it in the preheated oven and bake for 30-35 minutes.

5. Meanwhile, mix lemon juice, sugar, eggs and yolks, starch. Place over heat and cook for 2-4 minutes after boiling over low heat.

6. Remove the pot from the heat and strain the mixture through a sieve.

7. Add 2 tablespoons of butter, a few drops of vegetable oil, and the remaining lemon zest.

8. Remove the pan with the crust from the oven and pour the lemon mixture into it, then return to the preheated oven at 170 degrees for 10-15 minutes.
