
Delicious Zucchini Caviar with Mayonnaise for Winter
Description
Winter preserves at home. For zucchini caviar, chop the zucchini and onion using whichever method suits you—a blender or meat grinder works well. Cook the vegetables thoroughly, then add mayonnaise, tomato paste, and spices. Pack the finished spread into jars and seal them. Serve at the table or store in the pantry.

Let's prepare the ingredients.

Peel the onions, rinse them, and cut each bulb into 4 pieces.

Cut the young zucchini into pieces. If the zucchini is overripe, it is better to peel it and remove the seeds. The net weight of the zucchini should be 3 kilograms.

Run the zucchini and onion through a meat grinder.

Place over heat, bring to a boil, and cook for 1 hour.
