Description

The recipe for making pitted cherries in syrup may be a little more involved than typical preserves, because this dessert is made in several stages. But I personally never feel too lazy to make these cherries in syrup with the pits at home, because I know that all through autumn, winter, and spring I will be able to enjoy their amazing flavor. Be sure to try making this treat—I think you will like it; the cherries turn out very fragrant, and the syrup is quite thick and rich.

    First, we thoroughly rinse the berries under running water and drain them in a colander so the cherries dry off a little.

    Then we pour water into a saucepan, bring it to a boil, and immerse the berries in the boiling water for one minute.

    After that, measure half a glass of water into another clean saucepan, place it back on the heat, and wait until the liquid comes to a boil.

    Add half of the required sugar (650 grams) to boiling water.

    Bring the syrup to a boil, stirring constantly, and remove it from the heat.

    Transfer the cherries into the hot syrup and leave the berries in it for 4 hours.

    Pour the syrup into a saucepan, add 325 grams of sugar to it (half of what remains), and place the saucepan over high heat.

    Once the syrup comes to a boil, reduce the heat to medium and cook the mixture for 10 minutes.

    Then turn off the heat, transfer the cherries back into the hot syrup, and let them steep for 5 hours.

    Next, we separate the berries from the liquid one last time, add the remaining sugar to the syrup, and boil it for another 10–12 minutes. Then we combine the syrup with the cherries and cook everything together until the syrup reaches the desired consistency; I like it when it is thick enough.

    Pour the hot cherries in syrup into clean sterilized jars (sterilized for 25 minutes).

    Then tightly close the jars with the prepared hot lids.

    When the cherries in syrup have completely cooled, they can be moved to storage in a cool, dark place.
