I’m absolutely delighted with this recipe for mashed cherries with sugar — the berries turn out so delicious, and you can use them in baking or as a garnish for desserts. The syrup is just as good — you can dilute it with water and drink it on its own, or add a little lemon juice and spices and use it as an original sweet-and-sour pink sauce for meat. In short, there’s plenty of room for creativity. So, how to mash cherries with sugar: 1. First, wash all the berries thoroughly and remove the stems and pits. 2. While your cherries are resting somewhere and slowly releasing their juice, sterilize the jars. 3. Into the still-hot containers, start layering the berries, sprinkling sugar between the layers as you go. 4. Now simply set the jars aside for several hours, or better yet — overnight. 5. The next day, the berries should already be submerged in juice. At the very least, all the sugar should have darkened. 6. Now seal all the jars with metal lids with rubber gaskets, and store the preserves in a dark, dry, cool place. Done! Now you know too — the preserve is ready for winter storage.
