
Cherry with meringue topping
Description
Perfect for tea and coffee. If you're on a diet but craving something sweet and delicious, make cherry meringue dessert — no high-calorie ingredients or flour. This recipe uses cherries as the filling, but you can also use blueberries, red or black currants, or raspberries. For best results, beat the egg whites with powdered sugar instead of granulated sugar — this will make the meringue lighter and fluffier. Use 15% or 20% sour cream for the batter — it will be thicker and hold its shape better. The baked good is ready. Serve at the table.

1. Pour water over the oats and let them soak for 20–30 minutes. Mix the egg yolks with sour cream and add the soaked oats. Add sifted oat flour and knead the dough with a spatula.

2. Place the dough into a parchment-lined baking pan and bake in a preheated oven at 200 degrees for 20 minutes. Cool the cake in the pan.

3. Beat the egg whites with salt until stiff peaks form, then gradually add sugar and beat again. Pit the cherries and mix with a spoonful of sugar. Spread the cherries over the cooled cake base, then top with the beaten egg whites.

4. Bake the pie at 250 degrees until the meringue turns golden, about 10 minutes. Let the pie cool slightly in the mold, then transfer it to a serving dish.
