Description
If you love treats like marshmallows, but aren't satisfied with the taste of store-bought ones, make them at home. It's not very difficult, you just need the desire. This simple recipe clearly explains and demonstrates how.

Thaw the cherries and let the juice drain through a sieve.

Blend the cherries into a puree. Weigh the puree; we need 250 grams. Then slightly warm the puree and add 200 grams of sugar to it.

Beat the warm cherry purée with sugar using a mixer, add the egg white, and continue beating until the mixture increases in volume 3-4 times.

Add agar-agar to water, place on the stove, bring to a boil, then add the remaining sugar. Stir and cook until the syrup temperature reaches 110 degrees.

While continuing to whisk the purée, slowly pour in the syrup with agar in a thin stream. Whisk for about 5 minutes, until the mixture becomes thicker, lighter in color, and increases further in volume.

Check the marshmallow mixture for readiness: it should cling to the inverted whisk of the mixer and not fall off.

Quickly fill the pastry bag with meringue mixture, then pipe plump marshmallows onto the mat using a large star-shaped nozzle.

The meringue should dry for 10-12 hours. Then dust it with powdered sugar and serve. Store in a closed container in the refrigerator for no more than 6-7 days.
