Description

Cherry cake is notable for being made with the inclusion of cherry berries. In addition, it uses cherry syrup, which wonderfully soaks the cake layers. Be sure to remove all the pits from the berries to avoid accidentally damaging your teeth. Serve warm or chilled. Perfect with tea.

    Make a sponge cake. Separate the egg whites from the yolks. Beat the yolks with half a cup of sugar. In a separate bowl, beat the egg whites. When a good foam forms, gradually add 0.5 cup of sugar. Beat until stiff peaks form. Then carefully transfer the egg whites to the yolks and mix with a mixer at the lowest speed. Gradually sift in all the flour, followed by cocoa powder. Keep the mixer running at the minimum speed while doing so.

    Melt the butter until liquid. Pour it into the batter while still warm. Mix with a spatula or mixer. Take a baking pan, grease it with butter. Pour the batter into the pan. Bake at 200 degrees Celsius for 30 minutes. Check for doneness with a toothpick.

    While the biscuit rests in a safe place, let's make the cream. Pour a liter of cream into a deep container and mix it with a cup of sugar (or powdered sugar). Add 50 grams of starch. Beat everything with a mixer at the highest speed until the cream thickens. Then place the cream in the refrigerator.

    Now my frozen cherries will come in handy. Cook them with a cup of sugar and a small amount of water. You can do this in advance or use ready-made jam. I'm not in a hurry—I'll manage everything just fine. Simmer the cherries until the juice becomes syrupy. Don't add too much water! Let it cool down.

    Let the rested cake cool, then cut it into 2-3 parts, whichever is more convenient for you. If your baking pan is high and narrow, cut it into 3 layers. Soak each cake layer (you can do it on both sides) with cherry syrup. If the syrup is too thick, dilute it with water or brandy.

    Take the cream out of the refrigerator. Spread it over the cake layer. Take out a few cherries and place them on top of the cream. The cherries can be trimmed. Place the second layer on top of the first, spread with cream again, and add berries. Cover with the third layer. Now, carefully spread the cream along the sides of the cake using a spatula. This will make it look much more elegant.

    Spread the cream on top, reserving a little for decoration. Grate the chocolate bar on a fine grater and sprinkle it over the cake. Transfer the remaining whipped cream into a piping bag with a small hole, and squeeze out decorative shapes on top. Also arrange cherry berries on the cake. The cake is ready! You can eat it right away, or refrigerate it for a while to let it soak better.
