
Cherry pie with almond topping
Description
Delicious baked treat for the whole family. Crispy on the outside and soft on the inside – this pie is sure to be a hit. Serve with tea or coffee.

Step 1

1. Remove pits from cherries. Place the puff pastry into a pie pan. Refrigerate for 30 minutes to chill. Preheat the oven to 220°C. Cover the pastry with foil, place dried beans on top, and bake until lightly golden, about 30 minutes. Reduce the oven temperature to 190°C.

2. Prepare the almond topping. Pulse the oats in a food processor until you get about 1/2 cup of oat flour. Grind the almonds in a food processor or finely chop them with a knife. Melt the butter and let it cool. In the bowl of a food processor, combine the ground almonds, oat flour, flour, sugar, cinnamon, and salt; mix until well blended. Transfer the mixture to a bowl and stir in the melted butter. Make the cherry filling. In a large bowl, mix the cherries with sugar, starch, and salt. Add extra sugar if desired.

3. Place the cherry filling over the prepared pie crust. Sprinkle with almond topping and bake in the oven for 1 hour and 10 minutes, until the filling begins to bubble. Let cool to room temperature before serving.
