
French-style cherry pie
Description
Delicious baked treat for the whole family. My cherry pie, the recipe for which I've written below, is not one of those overly simple pies that are quick and easy to make. This one requires a bit of effort, especially when it comes to preparing the right dough. Basically, I've included almost everything in the recipe, but just in case, I'll share a couple more tips. You don't have to rub the butter and sugar into a perfectly smooth mixture—small pieces are okay, especially if you're using a fork or whisk. Also, I can't specify the exact amount of flour, because the dough should be neither too thick nor too runny. Flour quality varies, as you know. For the crumb topping, rub cold butter, flour, cocoa, and sugar together until it resembles fine crumbs; I usually start with a knife and then use my hands. See the recipe for details. Serve cooled or slightly warm.

Rub soft butter together with sugar.

Add the eggs and beat, using a blender if desired.

Add the zest and mix well.

Add flour and baking powder.

Knead a not-too-thick dough, as shown in the photo.

Place the dough in a pan on parchment paper. Arrange cherries on top.

Bake the pie for 10 minutes at 220 degrees, then for 10 minutes at 200 degrees.

Evenly sprinkle the pie mold with the crumb mixture of butter, sugar, flour, and cocoa. Bake for another 20 minutes.
