Cherry pie made from yeast dough

Description

The pastry is simple and quick to prepare. You can make a cherry pie using ready-made yeast dough, but preparing the dough yourself won't take much effort either. For the cherry filling, I used canned cherries in syrup—about 350 g of cherries; the rest was syrup, which I later boiled down (details below). By the way, you can also use fresh or frozen cherries. Serve warm or chilled. Perfect with tea.

    Knead the dough: add dry yeast, sugar, a little salt (just a pinch, enough for the tip of a knife), warm milk (it must be warm) and an egg to the flour. Knead the dough. Cover it with a towel, place in a bowl, and let it rise (for 40-60 minutes). Then, once the dough has risen, knead it again by hand and roll it out. Place the rolled dough into a baking pan.

    While the dough is rising, you can prepare the filling: pour the canned cherries into a bowl or saucepan, add lemon juice. Mix sugar and starch, then sprinkle into the cherries. Cook over low heat, stirring, for about 2 minutes after boiling. The mixture must thicken. Now return to the dough. Neatly trim off excess dough and shape the edges along the contour of the pan.

    Use a fork to make holes so the dough doesn't puff up too much and the pie stays flat.

    Make even and sufficiently high edges so that the filling doesn't spill over the sides.

    Evenly distribute the cooled cherries over the dough.

    Roll out thin, even strips from the leftover dough pieces. Use them to connect the ends of the shape, creating a lattice pattern. Preheat the oven to 220 degrees and bake the pie for 25–30 minutes. You can then leave it in the cooling oven for another 15 minutes. It is recommended to serve the pie completely cooled.
