
Cherry cheesecake
Description
The dish is prepared without unnecessary complications. Preheat the oven to 160 degrees. Line a baking pan with parchment paper and grease it with butter. In a food processor, grind crackers into fine crumbs. Add butter and blend. Transfer the mixture to the pan and bake until slightly browned, about 15 minutes. In a blender, beat cottage cheese and cream cheese for 4 to 5 minutes. Add 3/4 cup sugar, sour cream, eggs, flour, vanilla, salt, and blend. Pour the mixture over the crust in the pan and bake for about 1 hour. Let cool in the oven for 1 hour. Remove from the pan and cool to room temperature, about 2 hours. Refrigerate for 3 hours. In a large shallow skillet, combine cherries and the remaining 2 tablespoons of sugar. Cook over high heat until thickened, 10 to 15 minutes. Cool and refrigerate for 2 hours. Before serving, spread the cherry mixture over the cake and serve. The finished dessert is ready to be served.
