Cherry Muffins
Description
The recipe won't take much time. These delicate and beautiful cupcakes can confidently be served at a festive table or simply used to surprise your loved ones! The cupcakes turn out vibrant thanks to red food coloring. You can use powdered coloring (dissolved in a small amount of water) or gel coloring. The finished cupcakes are filled with a cherry filling, which I suggest making from cherry compote. They are decorated with whipped ice cream, which can be substituted with whipped cream. Serve chilled.
Instructions
- 1
Step 1

First, you need to prepare the filling for the cupcakes. For this, we will need homemade cherry compote, starch, sugar - 0.5 cup, vanilla sugar - 1 teaspoon.
- 2
Step 2

Put the sugar, vanilla, starch into a saucepan, and pour in the compote with berries. Mix, then place over heat.
- 3
Step 3

And cook until thickened. Set aside to cool completely.
- 4
Step 4

Prepare the cupcake batter. Mix flour, sugar, baking powder, and a pinch of salt; stir well. Add butter and mix with a mixer until crumbly.
- 5
Step 5

Separately mix the milk, liqueur, and eggs.
- 6
Step 6

Add yogurt.
- 7
Step 7

And also vegetable oil. Beat with a mixer.
- 8
Step 8

Add the food coloring and beat again until uniform.
- 9
Step 9

Add the red liquid mixture to the flour mixture.
- 10
Step 10

Beat the batter at low speed for 20 seconds—very quickly. Do not beat for too long, otherwise the cupcakes will turn out tough.
- 11
Step 11

Place the dough into the molds and preheat the oven to 180 degrees.
- 12
Step 12

And bake the cupcakes for 25 minutes until fully cooked. Let the baked cupcakes cool slightly, then cut out the inner part using a small sharp knife.
- 13
Step 13

Fill the cupcakes with the pre-prepared cherry filling.
- 14
Step 14

Mix the ice cream with the food coloring.
- 15
Step 15

Quickly mix until smooth.
- 16
Step 16

And decorate the cupcakes with a scoop of ice cream on top.
- 17
Step 17

Ice cream should be decorated right before serving.
- 18
Step 18

Done.
