
Cherry jam with pits
Description
A homemade winter preserve. For any amount of berries, use an equal amount of sugar and you will get thick, tasty jam. Cherry jam can be made with or without pits—it's up to you. Jam without pits is usually prepared for baking later and for children.

1. It's the season for summer berries and the perfect time to make preserves for winter. Cherries are cooked using the same principle as apricots. The ratio of berries to sugar is 1:1.

2. Wash the berries thoroughly and remove the stems. Discard any spoiled cherries as well.

3. Transfer the berries to the container in which you will cook them, sprinkle with sugar, and add water. Place over heat and bring to a boil. After simmering on low heat for about 2–3 minutes, remove from the stove, cover, and leave until morning. This procedure must be repeated several times (2–3 days).

4. Always skim the foam from the jam, and after the final boil pour it into jars and seal them (jars and lids must be sterilized).
