
Cherry compote for cake
Description
If desired, you can make the compote with crushed berries or without whole berries. Adjust according to your taste and the taste preferences of the person for whom the cake is intended. Use high-quality gelatin so that the compote holds its shape.

Prepare the listed ingredients. You can use either fresh or frozen cherries. The main thing is to remove the pits from the berries.

Rinse the cherries in water, remove the pits, and drain the liquid.

Place it in a saucepan or pot, add sugar, pour in water, and cook the berries for about 5 minutes from the moment the liquid begins to boil. Do not reduce the amount of sugar, as cherries are sour and gelatin absorbs some of the sweetness!

Pour the hot liquid into a deep container and add the gelatin. Stir and let it swell for about 5-10 minutes. Then stir thoroughly again, lifting the swollen gelatin from the bottom of the container.

Line the compote mold with plastic wrap. If your cake is rectangular, use a rectangular mold; if it's round, use a round one. Keep in mind that the compote layer should be 1 cm smaller in diameter than the cake, so it can be completely hidden within the cake, with the sides covered by frosting. Pour the liquid with berries into the mold and place it in the refrigerator.

After 2 hours, the compote will set. Place it onto a cutting board or onto the cake layer with cream. Remove the plastic wrap and assemble the entire cake.
