Prepare all the ingredients.

Pour water into a saucepan and add cherries with sugar. Bring to a boil and simmer over low heat for 10-12 minutes.

Then strain the resulting compote through a fine sieve. You can even do this several times.

Pour the strained compote back into the saucepan. In a small amount (15–20 ml) of the compote, dissolve the agar-agar powder. Heat the compote almost to boiling, then pour in the dissolved agar-agar and cook for 1–2 minutes, constantly stirring with a whisk.

Place the remaining cherries into individual serving glasses or ramekins.

Pour the hot jelly into cups. Cool at room temperature and refrigerate for 1 hour to set.
