
Rowanberry wine
Description
The drink is quick and easy to prepare. Natural homemade rowan wine is a beverage for true connoisseurs. Moderately sweet and very aromatic, it is incredibly smooth to drink. The process, although lengthy, is absolutely simple, and even a winemaking beginner can handle it with the help of step-by-step photos.

1. First of all, I'd like to point out: do not wash the berries beforehand, otherwise rowan wine made at home will ferment poorly.

2. Place the berries in a large container and start mashing them vigorously. It's best to do this by hand, without using any equipment.

3. Then you can add sugar. The recipe for making rowanberry wine uses a ratio of approximately 100 grams of sugar per 1 kilogram of berries. You can adjust the amount of sugar to taste, but don't overdo it.

4. Thoroughly mix the berries with sugar, then cover with a lid. Place in a warm spot and leave for about 10 days. The preparation will look like this: the berries will float to the surface and swell.

5. Using a fine sieve, strain the resulting mass, pressing the pulp well.

6. Pour the juice into previously prepared clean jars.

7. Mix the pulp with about a glass of sugar, pour in a liter of water. Cover with a lid and let it ferment for another 7 days.

8. Cover the jars with lids equipped with airlocks, placing the tube into a container of water. Leave for approximately 10–12 days in a dark and not overly warm place.

9. Keep an eye on the pulp, stirring it carefully each day. Then strain it through a sieve to obtain the second batch of juice.

10. Remove the lids from the jars and skim off the foam. Pour the wine into a large saucepan.

11. And add the juice after the must fermentation. Stir carefully.

12. Cover again with lids and set aside. Every week, carefully skim off the foam and transfer the wine, filtering it from the sediment. After a month, use a thin tube to siphon the wine. This is known as the "aeration" process.

13. After a month, you can filter the wine every 2 weeks, carefully leaving the sediment at the bottom of the jar.

14. After about 2-2.5 months, the wine will begin to become transparent and lighten in color. This means the first stage is complete, and if desired, you can taste it to see how it turned out.

15. If it's not sweet enough to your taste, now is the time to fix it. However, this should be done in a special way. Use a small piece of gauze (or thin fabric) folded into several layers. Place sugar in the center.

16. Tightly tie the edges of the gauze and secure the "pouch" at the neck of the jar. After 8-10 days, when the sugar has gradually dissolved, you can remove the improvised pouch. Now you know how to make wine from rowanberries. All that remains is to place the jars in a dark place and let the wine infuse properly.
