
Gooseberry wine
Description

Step 1

We carefully sort and rinse the gooseberries under cold water. Then, mash the gooseberries in a deep bowl using a potato masher.

Prepare a syrup from sugar and water (the sugar should dissolve completely). Let the syrup cool, then pour it over the berries. It's most convenient to place the berries in a large jar and pour the syrup over them. Stir the berries with the syrup using a wooden spoon, cover the jar with gauze, and leave it in a warm place for 6–7 days.

Remove the scum that rises to the surface carefully. Pour the liquid into a clean jar and cover it with a lid fitted with an airlock. Let the beverage ferment for 6-7 weeks.

Strain the young wine and pour it into bottles. Let the beverage mature in a cool place (approximately 1-2 months). Good luck!
