
Black chokeberry wine at home
Description
Delicious wine is always a good thing, especially when it's homemade. You'll know for sure that everything is natural and free of artificial factory dyes. The drink is ready to serve.

Step 1

Prepare the rowanberries. Do not wash them at all! The bacteria necessary for fermentation are located precisely on the outer surface. Any dirt will settle naturally at the bottom of the bottle, and we will remove it later. Simply crush every single berry thoroughly.

Pour the black chokeberries into a 10-liter non-metallic container. Add sugar: half a cup per 1 kg, or a full cup per 1 kg for those who prefer sweeter wine. Add a handful of raisins and mix thoroughly. Cover with a lid and place in a warm spot (18 to 25 degrees Celsius) for one week. Stir daily to prevent mold formation.

After a week, it's time to start extracting the juice. Collect all the pomace (crushed berries) and press out the juice. Strain through a colander. Then transfer the liquid to a fermentation vessel.

Now add another 1 kg of sugar and 1 liter of warm water to the liquid. Mix everything thoroughly. Leave in a dark place for a week, stirring daily and pushing the berries down into the liquid.

After a week of settling, install the airlock and again put it in a dark place.

Then, after 7 days, strain all the pulp through a colander and keep only the juice.

Remove the airlock from the fermenting jar and remove all the foam. Pour the juice obtained from the pomace. Put the airlock back on.

Now, every two days, it is necessary to remove the airlock and clean off the foam. Transfer the liquid to another bottle using a thin tube for better filtration. Repeat this process until all the wine residue is gone.

The final step: pour the young wine into bottles and let it age for several months. As everyone knows, the longer it stands, the tastier it becomes.
