Place the currants into a suitable container and let them thaw. To speed up the process, you can add a little cold water to the berries. When the currants become soft, mash them well and gently heat over medium heat.

Separately mix water with a cup of sugar, then pour it into the blackcurrant mixture. When it warms up to 28–30 degrees, add a small amount of raisins and place it in a warm spot for fermentation. Since fermentation will be quite vigorous, fill the container no more than 2/3 of its total volume.

On day 4-5, you can taste the fermenting mixture; it should not be very sweet. Add the remaining sugar, stir well, transfer into glass jars, and cover with lids fitted with airlocks. Instead of an airlock, you can stretch a rubber glove over the jar opening.

The wine will need to be strained for another three weeks, maybe longer. In the end, it will become clear and have a beautiful hue. This is the kind of currant wine made without yeast.
