Black elderberry wine at home

Description

The recipe won't take much time. I learned this recipe from a good acquaintance of mine. She has been making wine for over 15 years. I've never tasted wine like hers... Until I made it myself using this recipe. It's ready to serve.

    Do NOT wash the berries. Place them into a glass, stainless steel, or enameled container. Manually crush each berry, or alternatively grind through an electric meat grinder. Add 6-7 cups of sugar. Mix thoroughly and leave at room temperature not exceeding 25°C for 7 days. Stir daily.

    We strain the juice using a sieve, setting aside the pulp in another container (it will play its role later). We pour the liquid into jars.

    We mix the pulp with 1 cup of sugar and 1.2 liters of water. Cover the mixture with a lid and let it ferment for 7 days. Cover the juice with a water lock so that it continues the fermentation process as well.

    Store the first liquid in a dark and cool place (but not below 18°C). After a week, strain the pomace to obtain another portion of juice. Open the airlock of the primarily pressed mass, remove the foam, and pour in the second portion. Discard the foam.

    Close the jar with a water seal. Store in a dark place for another 7-12 days. Remove the foam film once a week. Filter the wine to get rid of the sediment. After a month, our black fruit drink is ready to be consumed!
