Step 1

1. According to the recipe for making blueberry wine, it is essential to use berries that can initiate the fermentation process. Unfortunately, blueberries themselves do not possess such properties. In this case, black chokeberries are specifically chosen. They do not need to be washed beforehand, which is very important! Mash the berries into a puree.

Step 2

2. Then pour in about 2 cups of water and add 5-6 tablespoons of sugar. Mix everything thoroughly.
- 3
Step 3

3. Pour the so-called starter into a glass bottle and tightly cover the neck with cotton. Place in a warm spot for about 7 days.
- 4
Step 4

4. On the same day, work on the blueberries. Since their skin does not have the necessary fermentation properties, we will use only the juice. It is most convenient to use a juicer.
- 5
Step 5

5. Then pour the resulting juice into a large container and add water at a ratio of 1 liter of juice to 250 milliliters of water.
- 6
Step 6

6. As for sugar, there are different options. In this case, the same proportions as with water are used (1 to 4), but you can adjust them to taste. Another very important nuance—add sugar frequently but in small amounts (for example, every day), not all at once! Pour the must into prepared clean bottles, cover with a lid fitted with an airlock, and place in a warm spot until the starter culture matures.

Step 7

7. When the starter is ready, pour the wort into a large saucepan and gently heat it (to about 40 degrees).
- 8
Step 8

8. Pour the starter into a saucepan and mix.
- 9
Step 9

9. Bottle again, cover with airlock lids, and place in a warm spot. Now the process will become active, and the homemade blueberry wine will start to "ferment." After approximately 7-8 days, strain the wine.

Step 10

10. It is best to perform filtration every 14 days, as sediment, although insignificant, will continuously accumulate.

Step 11

11. Here's another way to make wine from blueberries. After storing it in a dark place, let it steep for at least 3–4 months. The result is a very tasty and light wine.
