
Vindaloo
Description
Don't be intimidated by the unfamiliar name: preparing vindaloo at home is very easy. Essentially, you don't need any exotic ingredients. Perhaps only Indian spices are required, but you can buy them at any supermarket (although, of course, the best Indian spices can only be found in India itself—but let's work with what's available). Otherwise, the vindaloo recipe is very simple and anyone can master it. Good luck!

Mix the spices and vinegar. A thick paste should form.

In a frying pan, sauté finely chopped onion and garlic until the onion turns brownish-golden. Then add the paste, mix well, and cook for another three minutes over very low heat. Stir carefully and make sure the spices do not burn at all.

Add the sliced pork to the skillet. You can cut it either coarsely or finely—whichever you prefer. Cover with a lid and simmer over low heat until the meat is cooked through. If necessary, add a little water to the skillet to prevent the pork from burning. Serve hot.
