
Victorian sponge cake

Queen Victoria Cake or Victorian sponge cake is a popular dessert in England. Now you can make it too. Traditionally, it is decorated with whipped cream and berries. Instead of fresh berries, you can use frozen ones or jam.

1. Separate the egg whites from the yolks. Mix the sugar with lemon zest. Beat the egg yolks, then add boiled water, sugar with zest, vanilla, and lemon juice.

2. Sift the flour and add it to the yolks, mix well.

3. In a separate bowl, beat the chicken egg whites until foamy, then add to the batter.

4. Divide the dough between 2 baking pans.

5. Bake at 180 degrees for about 30-35 minutes. Let cool completely.

6. Whip the cream with powdered sugar and slice the berries into thin pieces. Remove the sponge cakes from the mold, decorate one with whipped cream and berries.
