1. Wash the meat and pat it dry. In a large pot, combine the water, salt, sugar, and spices. Bring to a boil, remove from the heat, and let cool to room temperature.

2. Place the meat in a large container and pour the marinade over it.

3. Put it in the refrigerator for a week. Yes, yes, for exactly that long. The original recipe recommended keeping the meat for 12–14 days, but I think a week will be quite enough. You can place a weight on top so the pork stays submerged in the marinade at all times.

4. That’s it—the meat has marinated properly. Take it out and pat it dry with a paper towel. Now you can put it in a pot of water and cook at 80°C (it’s very important to keep the temperature steady!).

5. Or else place it in a smoker if you have one on hand.

6. What you get in the end is simply beyond words. An incredibly rich flavor and aroma—the ham literally melts in your mouth. Really great—I recommend it!
