Step 1

Mix flour, eggs, warm water, vinegar, vegetable oil, and a pinch of salt to form a soft and elastic dough. Let it rest for half an hour in a warm place.

Then divide the dough into 4 equal parts (for two vertuts) and roll them out into sheets, then stretch them by hand until they become as thin as cigarette paper.

Now take one pastry layer, brush it with melted butter, and cover it with the second layer. On the second layer, spread the filling made from a mixture of cottage cheese, egg, raisins, sour cream, sugar, and vanilla sugar.

Roll the dough with the filling into a log. Then grease the baking sheet with butter and place the vertuta on it, coiled like a snail.

Brush the surface with beaten egg and place the vertuta in a preheated oven at 180 degrees. Bake for 35-40 minutes. That's it—transfer the hot, aromatic vertuta onto a serving plate, cut into pieces, and enjoy.
