
Vertyuta with cracklings

Delicious baked treat for the whole family. Vértuta with cracklings is a wonderful substitute for bread served with a rich, flavorful borscht. And if you rub it with garlic… mmm… absolutely delicious! A tasty crispy crust with cracklings inside—of course, this is a matter of taste and perfect for a family lunch rather than for guests. Although, guests can vary too. The recipe for crackling vertuta comes to us from Moldova and has become quite popular. I'll tell you how to make it. It can be served with tea or coffee.

Step 1

Dissolve the yeast in 50 grams of warm water. Add salt, sugar, dissolved yeast, vegetable oil, and egg to the kefir. Mix well, gradually adding flour to form the dough. At the end of kneading, the dough should not stick to your hands. Let the dough rest for 15–20 minutes.

For cracklings, cut the fat into small pieces. You can use fat with a layer of meat. Fry the fat until it becomes cracklings.

Take the cracklings from the frying pan with the fat and slightly chop them.

Divide the dough into 3-4 parts. Roll each part into a thin flatbread. Place the cracklings on top. You can season them with salt and pepper.

Now we begin rolling the flatbread with cracklings into a roll.

Seal the seam well and join the edges of the roll. You can shape it into a ring or coil it like a snail. Gently press down on the roll to make it flatter. Heat 2-3 tablespoons of vegetable oil in a skillet and fry the vertuta with cracklings over low heat on both sides.
