
Vertuta (Strudel)
Description
Homemade baked goods for tea. Simple to prepare, delicious, and versatile. Also suitable for fasting. Serve warm or chilled. Perfect with tea.

Step 1

Put flour into a bowl, make a well in the center, add salt, pour in water. Knead dough as you would for dumplings. Cover with a towel and let the dough rest for about 10-15 minutes. Divide the dough into 5 balls, roll them into balls, cover again with a towel, and let rest for another 10 minutes.

Roll out each ball into a thin flatbread and let the dough rest again for about 10 minutes.

Pour vegetable oil into a frying pan. Dip each flatbread one by one into the vegetable oil and stretch the dough very thinly on the table (so thin that you could read a newspaper through it).

On the table, roll the dough out very thinly. Then stack all five layers on top of each other. This creates a kind of layered pastry.

Place on the top layer, previously soaked in boiling water and chopped apricots, prunes, and raisins.

Roll into a log.

Place on a baking sheet and bake in the oven for 30-35 minutes at 180 degrees.

You can use any filling: cottage cheese with raisins, savory cottage cheese, liver, fried sauerkraut, dill with egg. (Since it's fasting season now, I'm making it with dill and without egg.)
