Description

The recipe won't take much time. In the traditional Moldovan version of vertuta, feta cheese or meat is usually placed inside the roll, but personally, I prefer the version with simple potatoes. The taste of this filling feels especially homey and familiar to me, and my whole family loves it too. That's why today I'd like to share with you an easy recipe for potato-filled vertuta. Basically, there are no particular difficulties in preparing this dish; the only part requiring time and effort is kneading and rolling out the dough, as it needs to be rolled very thin. Other than that, everything is extremely simple. Homemade vertuta with potatoes turns out incredibly delicious, so whenever I make it, my entire family gathers around the table. Serve it cooled down or slightly warm.

    First, we need to knead the dough using flour, vegetable oil, water, and a pinch of salt. The dough should not be too stiff, as it will be quite difficult to roll out. Let the prepared dough rest for 20–25 minutes, then divide it into two equal parts—each part will make one vertute. Take one portion of the dough and roll it out as thin as possible, then place it on a paper towel and brush the surface with vegetable oil.

    Now peel the potatoes, cut them (raw) into small cubes, and place them on a paper towel to dry. Finely chop the onion, add it to the potatoes, place the mixture onto the dough sheet, spread evenly, and season the filling with salt and pepper.

    Next, we lift the edge of the napkin and roll the dough with the filling into a roll.

    Grease the frying pan with vegetable oil and place the roll on it, coiled like a snail. Brush the surface of the vertuta with oil as well, cover the pan with a lid, and put it in a preheated oven at 180 degrees for 40 minutes.

    After the time has elapsed, remove the fragrant vertuta from the oven, cut it into pieces, and serve.
