
Vertushka with apples
Description
Delicious pastry for the whole family. My apple filling turned out extremely juicy, so I sprinkled the apples with a little starch; you may not need to do this — it’s optional. You can add raisins to the apple filling to enhance the flavor, or chopped nuts. The pastry is ready. Serve it at the table.

Have all ingredients ready at once. The butter should be well chilled.

Put all the flour and cold butter, cut into pieces for easier handling, into the blender bowl.

Run the appliance for about a minute; you should get fine crumbs.

Pour all the flour crumbs from the blender jar into a roomy bowl.

Add the sour cream, sugar, and salt, then beat in the eggs.

Knead a soft dough that does not stick to your hands.

Prepare the filling. Peel and core the apples, grate the flesh on a coarse grater, add sugar and cinnamon. Mix everything together.

Divide all the dough into two parts. Lightly flour your work surface and roll each portion into a thin sheet.

Spread half of the apple filling evenly over one sheet. Dust lightly with starch if you find your filling exceptionally juicy.

Roll the dough into a log, shape it into a crescent, place on a baking sheet lined with parchment paper, and optionally brush the surface of the dough with beaten egg. Bake the vertukha in an oven preheated to 180°C for 35–40 minutes. You should end up with two such vertukhas.

Serve the finished pinwheels to the table immediately.
