
Viennese cookies
Description
Homemade baked goods for tea. Austria has always been renowned for its confectionery triumphs, and Viennese cookies are one of these Austrian masterpieces. In Austria, Viennese cookies are traditionally baked for Catholic Christmas—but that is none of our concern: we can bake them just because we feel like it. The recipe, it should be said, is quite simple, and the cookies turn out very good—crumbly, fragrant, and delicate.

Beat the butter and icing sugar until the mixture is creamy.

Add the egg yolks and vanilla essence to the mixture.

Mix everything thoroughly until smooth and homogeneous.

Add flour to the mixture and start kneading the dough. In the end, you should have two balls of dough—one larger and one smaller. Put the smaller one in the refrigerator.

And the larger piece we roll out onto a baking sheet lined with parchment paper.

Evenly spread the strawberry jam over the dough.

Grate the remaining slightly frozen dough on a coarse grater over the jam. Put the baking sheet in an oven preheated to 200°C and bake for 20–25 minutes.
