Description
The recipe won't take much time. Technically, preparing a Viennese roll is very simple if you follow the step‑by‑step recommendations and prepare all the ingredients in advance according to the recipe. And the result won't disappoint, because the roll turns out very tasty, like in a Viennese coffee house. Serve it cooled or slightly warm.

Prepare the ingredients.

Add the yeast and 1 tablespoon of sugar (from the amount intended for the dough) to warm milk (125 ml), then place it in a warm spot for 15 minutes.

In the mixing bowl, sift the flour, add a pinch of salt, lemon zest.

Add softened butter (40 grams), pour in the starter.

Knead the dough, cover it with plastic wrap or a cloth, and place it in a warm spot to rise for 2 hours.

While the dough is proofing, work on the filling: heat the milk (110 ml) with honey, add poppy seeds to it and let them swell for at least 1 hour.

If the cottage cheese is wet, hang it in cheesecloth for 2 hours to let excess moisture drain away. Pass the cottage cheese through a sieve to improve its consistency.

Add 20 g of butter to the cottage cheese, 60 g of sugar, 1 egg, pour in a tablespoon of cognac, add saffron, starch.
