But it's essential for waffles. Pearl sugar resembles compressed sugar beads that don't fully dissolve during cooking, resulting in the traditional crunchy sugar specks found in Belgian, Liège, and Viennese waffles. Preparing delicious Viennese waffles in a waffle maker requires considerable time for making the batter, so be prepared. However, the result is absolutely delightful. Serve warm or chilled. Ideal with tea.

Prepare all the ingredients you will need in the process.

First, prepare the yeast starter: dissolve dry yeast in warm milk. Let it rise. Then add sifted flour—two-thirds of a cup—to the starter. Add the egg and mix everything. Then sift the remaining flour (one and one-third cups) on top of the dough. But do not mix! Just leave the flour on top.

Cover the bowl with dough using plastic wrap and let it rise in a warm place. Then remove the plastic wrap. You will notice that the dough is bubbling at the edges due to the yeast, which is normal. Add brown sugar.

Then add the vanilla extract.

Mix the dough thoroughly with a mixer, then add the melted butter. The dough will stick heavily to your hands, do not be surprised, this is how it should be.

Knead the dough, lightly dust it with flour, and cover the bowl again with plastic wrap. Let the dough rise at a warm temperature. The rising process should take a long time, about 3–4 hours. Therefore, it's best to prepare the waffle dough in the evening, because afterward the dough needs to be refrigerated for half an hour, although it can also be left overnight. Then, in the morning, you'll be able to make waffles.

Take the dough out of the refrigerator, add pearl sugar to it, and mix by hand until the sugar is evenly distributed.

Divide the dough into 6 portions, wrap them in plastic wrap, and let rest for an hour and a half.

As you will notice, during these one and a half hours the yeast has started working again: the dough has risen and "air" streaks have appeared on its surface.
