
Viennese Waffles (Healthy)
Description
It goes perfectly with tea and coffee. For the waffles I used whole-wheat flour, which you can swap for oat, rice, or whatever flour you have available. I added just a tiny bit of “Stevia” sweetener to the batter—you can skip it or use whichever sweetener you prefer.

Prepare the ingredients you need to bake Viennese waffles in a healthy eating version.

Place the cottage cheese in a suitable bowl, add salt, and mash it slightly. If you like, you can blend it with a blender.

Beat the chicken eggs, add sugar substitute and vanillin. Mix the ingredients.

Add plain unsweetened yogurt to the egg–cottage cheese mixture. The yogurt can be replaced with low-fat sour cream.

Add whole wheat flour and baking powder. Mix the dough.

Preheat the waffle iron and grease it with vegetable oil. Spoon in the batter and bake for about 3–4 minutes.

Transfer the baked waffles to a plate and bake the next batch.
