
Gluten-Free Viennese Waffles
Description
Perfect with tea or coffee. These tasty gluten‑free waffles are easy to pack for school, a picnic, work, or a trip—the bake stays fresh and delicious for a long time. They go wonderfully with sour cream, thick or pourable yoghurt, various toppings, and sweet sauces. Serve chilled or slightly warm.

Prepare the ingredients listed.

Break the eggs into a deep bowl and add salt and granulated sugar. If you like, you can also add vanilla sugar—the waffles will have a bolder aroma. Whip everything on your mixer’s highest speed for about 3–4 minutes, until it is increased in volume and pale.

Pour vegetable oil into the mixture and mix. The oil should be odorless.

Add the rice flour and baking powder and gently fold them into the egg mixture with a silicone spatula — do not beat!

Preheat the waffle iron and brush the plates with vegetable oil. Spoon 1.5–2 tbsp of batter onto the centre of the bottom plate (depending on how wide your appliance’s plates are), close it, and bake the waffles for about 2–3 minutes until golden brown.

Place the hot waffles on a plate and serve at the table. If you let the baked goods cool, they will become crisp and brittle. The main thing is not to cover them with a towel.
