
Hungarian retesh
Description
Preparing Hungarian retesh is actually very simple; all the ingredients are readily available and almost always on hand. The pastry is perfect when you need something quick to make for tea. For the filling you can use any seasonal berries or fruits, nuts, cottage‑cheese paste. In this recipe I suggest using jam and walnuts for the filling. Any jam will do to your taste; I have fig jam. The pastry is ready. Serve at the table.

Prepare all the ingredients.

Combine the flour, water, butter, salt, and egg.

Knead a soft and pliable dough. If necessary, you can add a little more flour during the process. Gather the dough into a ball, cover it, and let it rest for 20 minutes.

Then roll out the dough into a rectangular sheet. I rolled it out directly on parchment. The thinner you can roll it, the better.

Spread the dough with jam or preserve, leaving a little space from one edge, and sprinkle with chopped nuts and sugar.

Roll up the roulade, pinch all the edges and place the roulade on a baking sheet seam side down. Brush the roulade all over with egg yolk. Bake in the oven at 180 °C for about 30 minutes.

Vengal's retesh is ready. Let the roll cool a bit, cut it into portions and serve.
