
Hungarian cheese pastries with cottage cheese
Description
Homemade pastries for tea. Baking Hungarian vatrushkas is easy for any homemaker, especially if you have ready-made puff pastry in your freezer. Both regular and yeast puff pastry work perfectly for vatrushkas. The cottage cheese for the filling should not be too liquid! If your filling turns out too runny, add a couple of tablespoons of semolina and let it sit for about 15 minutes. Serve cooled or slightly warm.

First of all, take out the dough and let it thaw.

Beat one egg with sugar until lightened in color. Beat the egg white from the second egg until stiff peaks form.

Press the cottage cheese through a sieve, add lemon zest and the egg beaten with sugar. Mix.

Add the beaten egg white to the resulting mixture and gently stir.

Roll out the dough slightly and cut it into squares. The sides of the squares should be at least 10 cm. Place the cottage cheese filling in the center of each square. Brush the corners of the squares with egg yolk.

And carefully pinch the top of each vatrushka, sealing the corners properly so the filling doesn't leak out during baking.

Place the vatrushkas on a baking sheet lined with parchment paper and bake in a preheated oven at 180-190 degrees for about 30 minutes.
