Hungarian vatrushki

Description

Delicious baked treats for the whole family. These vatrushkas are perfect for tea time, great for treating friends and relatives, or packing for a child's school lunch. Thanks to the addition of lemon juice and zest, the filling has a special flavor that makes these vatrushkas unique. Serve with tea or coffee.

    1. Warm the milk, then add the yeast, stir, and let it sit for 10 minutes. In a separate bowl, mix the previously sifted flour, sugar, egg yolks, and salt. After the allotted time, combine the flour mixture with the yeast mixture.

    2. Knead the dough, adding flour if necessary. Cover the dough with a towel and let it sit for two hours in a warm place.

    3. Prepare the filling: place dry cottage cheese in a bowl, wash the lemon and finely chop the zest, add the zest to the cottage cheese, and squeeze the juice from one half. Separate the yolks from the whites, add the yolks, semolina, salt, and sugar, then mix. In a separate bowl, beat the egg whites, then gently fold them into the cottage cheese mixture.
