
Hungarian dumplings nokdli
Description
Nokedli is a dish from Hungarian cuisine. If nokedli are tossed with butter, they are delicious on their own. But usually they are served with goulash or chicken paprikash, and also added to soup.

Step 1

1. Place a large pot of water on the stove and bring to a boil. Add 1 tsp salt and 1 tbsp vegetable oil. In a large bowl, mix 2 cups flour and 1 tsp salt. Add 4 eggs. Add 2 cups water and stir to form a liquid batter. Do not mix the batter until completely smooth; lumps should remain. The consistency should resemble homemade cottage cheese. Let the batter rest while the water comes to a boil. Cook the batter in three batches.

2. Place the noodle grater over the pot. If you don't have a noodle grater, you can use a colander. Take one-third of the dough out of the bowl and place it into the grater. Grate one-third of the dough using a wooden spatula.

3. After the dumplings float to the surface, wait for a minute, then check for doneness.

4. Using a sieve coated with vegetable oil, remove the gnocchi from the water. Gnocchi can be served as a standalone side dish or in soup.
