
Venezuelan Banana Cake

The recipe won’t take much time. In our family, bananas are a favorite fruit, so all kinds of banana desserts are always welcome. One of the latest finds is a Venezuelan banana cake. I dug up the recipe in a culinary magazine and immediately realized this was exactly what I needed. Quick and very easy to make, requiring no fancy or hard-to-find ingredients, tasty and beautiful. Serve warm or chilled. Perfect with tea.

We start with the dough. Mix the flour, sugar, salt, 100 grams of butter, and the egg yolks. Knead this into a soft, elastic dough.

Wrap the resulting dough in plastic wrap and place it in the refrigerator.

Now, while the dough is in the refrigerator, we work on the filling. Peel the bananas, cut them into small pieces, and blend them with a blender until pureed. Meanwhile, soak the raisins in water.

Mix the banana puree, sugar, vanilla, and spices. Beat with a mixer, then add chopped nuts and raisins to the mixture.

Take the dough out of the refrigerator and roll it out into a large flat round. Take a baking pan (about 25 cm in diameter), grease it with butter, and place the dough in it. Use a fork to make small holes in the dough.

In another container, beat the egg whites with salt until stiff peaks form. Mix the foam with the banana mixture.

Pour the filling over the dough. Put it in an oven preheated to 200 degrees and bake for 5 minutes, then reduce the temperature to 180 degrees and bake for another 25 minutes until done. Serve chilled.
