
Vegetarian Aspic for New Year's

Perfect for the table and with drinks. Everyone always wants a bright, delicious celebration. And if you don't eat meat, I can offer a recipe for an interesting vegetable aspic! It will be a table centerpiece and delight vegetarians.

So, first prepare all the necessary vegetables. I boiled the carrots ahead of time, because they take a long time to cook and cool. You can use boiled or canned corn.

Cabbage and peas need to be cooked, but I don't think bell pepper should be boiled—I think it's tastier raw in aspic. But you can boil it for a couple of minutes too; do whatever you prefer. Put the cabbage and peas in a saucepan, add a bay leaf, salt, peppercorns, and pour in a glass of water. Cook for about 10 minutes.

Peel the carrots and wash the peppers; remove the seeds. Dice some of the vegetables, and cut the rest attractively for garnish.

In a deep bowl, combine boiled peas, shredded cabbage (don't chop it too finely!), carrots, bell pepper, and corn.

Take deep salad bowls (or just small bowls) and place the garnish in them first.

Fill with vegetables.

After boiling the vegetables, you will have vegetable broth left. Remove the spices from it. Taste for salt and adjust to your liking. Add agar-agar and bring the broth to a boil. Stir until the agar-agar is completely dissolved. Remove from the heat. Let it cool slightly and pour the gelling mixture over the vegetables. Chill for 2 hours. Then remove the aspic and turn it out onto a plate. Serve garnished with herbs.
