
Vegetarian tamale
Description
This recipe won't take much time. Tamales are a traditional Mexican dish: specially prepared corn dough with a filling, wrapped in corn husks. Serve with greens and sauce.

1. Soak the dry corn husks in water for at least 30 minutes.

2. Add corn flour, baking powder, 1/2 teaspoon salt, 1 teaspoon cumin, and 1 teaspoon chili powder to a bowl. Then add 2 cups vegetable broth and mix.

3. Beat the butter with a mixer in a bowl for about 1 minute, then add the flour mixture and beat again. Set the dough aside.

4. Prepare the filling. Dice the zucchini, green onions, and tomatoes. Press the garlic through a press. Grate the cheese. Finely chop the cilantro. Squeeze juice from the lime. Sauté the zucchini, green onions, and garlic in a skillet over medium heat in 1 tablespoon of oil for 2–3 minutes.

5. Now add the remaining broth (1/4 cup), cilantro, tomatoes, lime juice, the remaining cumin and chili powder (1 teaspoon each), and salt (1/4 teaspoon). Mix everything together and add grated cheese. Transfer the filling to a bowl.

6. Take one of the corn husks soaked in water and spread a thick layer of dough on top. Spoon the filling into the center.

7. Roll up, securing the edges with other corn husks. Repeat with the remaining husks and filling.

8. Take a large pot, add about 2 liters of water, and steam the tamales in a water bath for about 90 minutes over medium heat, covered with a lid. Make sure the tamales do not touch the water.
