
Vegetarian curry
Description
For making vegetarian curry, you can use any vegetables you like. I usually use: carrots, zucchini, eggplant, cabbage, bell pepper, and potatoes. The key to a successful curry is the spices, so I recommend using at least turmeric and coriander. For those who like it spicy, feel free to add more chili pepper.

In a spoonful of vegetable oil, fry the spice mixture for 15 minutes, stirring constantly.

Try to cut all the vegetables into pieces of the same size and mix.

Sauté the coarsely chopped onion, finely chopped garlic, and thinly sliced ginger separately.

Add spices and nuts to them, fry for another 5 minutes.

In a separate skillet, sauté the vegetable mixture.

Now transfer the vegetables to the onion with spices, pour in the coconut milk, and simmer everything for about 15 minutes.
