
Vegetarian pilaf with mushrooms
Description
Here is a simple recipe for vegetarian pilaf with mushrooms. In the traditional pilaf recipe, meat is essential. Since our pilaf is vegetarian, meat is replaced with mushrooms. Believe me, it turns out just as delicious! Spices and garlic give the dish an incredible aroma! I recommend cooking it in a cauldron (kazan) or a wok. Good luck!

Rinse the mushrooms and dry them.

Heat the oil in a cauldron (wok), add the mushrooms.

Fry until golden brown.

Add the onion cut into half-rings. Fry for a few minutes, stirring occasionally, then reduce the heat to minimum and simmer covered for 10 minutes.

Add the carrot (grated on a coarse grater). Stir and cook for another 5 minutes.

Take half of a red and half of a yellow sweet pepper (different colors are just for appearance).

Cut the pepper into thin strips and add to the pan, simmer for another 5 minutes. Add salt and 1/3 teaspoon each of turmeric, paprika, basil, and marjoram.

Add half of the rice, a little more spices, then the second half of the rice and spices again. Place a whole head of garlic (with the bottom end trimmed off) on top. Pour boiling water over the dish until the water level is 1 cm above the rice. Cook over low heat for about 30 minutes.
