
Vegetarian sushi and rolls
Description
A delicious appetizer for any gathering. If you were not previously into rolls and sushi without fish, thanks to this recipe you will know. It can be served warm or chilled.

1. Cook the rice using the ratio: 1 cup of rice to 1.5 cups of water. Before that, rinse the grains thoroughly until the water is completely clear.

2. Prepare the dressing. Take vinegar. Pour it into a small container. Add salt and sugar. Warm it so they dissolve completely.

3. Pour it into the cooked rice, gently mixing from bottom to top. Then cover the pot with a clean towel and let it cool.

4. Now prepare the filling for the rolls. First, cut the cucumber into thin strips along the entire length of the vegetable. Cut the avocado in half. Then peel it and remove the pit. Slice it into very thin strips lengthwise. Prepare the cream cheese. To make it possible to slice, do not remove the wrapper right away. Slice it into thin strips.

5. Wrap the bamboo mat with plastic wrap. Place a sheet of nori on it. Moisten your hands. Take a portion of rice and place it on top of the nori, leaving a small margin from the edge.

6. Place the filling closer to the end from which you will start rolling the roll. Put cucumber, avocado, cheese, and a little capelin roe on the rice. Carefully roll it up and moisten the free edge of the nori so it seals the edge of the roll well. Moisten the edge of the knife with water and cut the roll into 8 equal parts. To do this, first cut it in half and fold the two parts once more. You will get 4; fold and cut once again to get 8 absolutely identical rolls.
