Vegetarian Sandwiches

Description

The recipe won't take much time. The vegetarian sandwiches turn out very large, filling, and appetizing, so they can satisfy even the strongest hunger. They can be an excellent alternative to pizza and a wonderful snack for a picnic.

    1. Preheat the oven on grill setting. Line a baking sheet with foil. Remove the seeds from the peppers and cut into pieces. Place on the prepared baking sheet.

    2. Bake the peppers in the oven until black spots appear on the skin, about 15 minutes. Remove the peppers from the oven and place them in a bowl. Cover the bowl and let stand for at least 10 minutes. Remove the skin from the peppers. Cut the flesh into 3 mm pieces.

    3. Slice the mushrooms and onion into 3 mm thick slices. Heat 1 tablespoon of butter in a medium skillet over medium-high heat. Add the onion and ½ teaspoon of salt. Sauté, stirring constantly, until the onion begins to brown. Reduce the heat to medium-low and cook for about 15 minutes, stirring, until the onion is dark brown. Transfer the onion to a bowl.

    4. Heat the remaining tablespoon of butter in the same skillet over medium-high heat. Add the mushrooms and ½ teaspoon salt. Cook, stirring constantly, until browned, about 3 minutes. Add the mushrooms to the bowl with the onion. Season the mixture with black pepper. Add the roasted pepper to the bowl with the onion-mushroom mixture.

    5. Evenly divide the vegetable mixture among the buns and place pieces of cheese on top. Place tomato slices on the top side of the buns. Place the sandwiches on a baking sheet with the tomato and cheese side up. Bake in “grill” mode until the cheese melts and the buns are lightly toasted, about 3–5 minutes. Let cool for a few minutes before serving.
