
Vegetarian Lavash Rolls
Description
Suitable for both special occasions and everyday meals. This recipe practically invented itself when I opened the fridge and found almost nothing inside. Now I make it all the time. To prepare vegetarian lavash rolls, you'll need very little tofu; avocado is optional—I just happened to have it on hand. If you don't mind mayonnaise, spread it on the lavash to help everything hold together. Read the detailed recipe. Serve with fresh herbs and sauce.

Mash the avocado and cheese with a fork. Season with salt and pepper. Spread the mixture in an even layer on the lavash.

Slice the tomato and cucumber into rings and arrange as the next layer.

Next, lay out a couple of napa cabbage leaves.

Carefully roll up the lavash. You can place it in the refrigerator for a while so it can soak up the flavors. But you can also cut it into serving-sized pieces right away. That's how you get these quick and delicious vegetarian lavash rolls!
