Vegetarian dumplings with zucchini

I never thought dumplings without a meat ingredient in the filling could be so delicious. If you think the same, I recommend not putting it off—try making them today. They will be absolutely delicious.

    Prepare the necessary ingredients. Wash the zucchini, peel if necessary. Peel the garlic. Sift the flour.

    Add salt and bran to cold water, then sift in almost all of the flour. You might need slightly less flour. Knead a soft dough that is slightly sticky to the hands. Add the remaining flour if necessary. Place the dough into a bowl lightly greased with vegetable oil. Cover with plastic wrap and refrigerate to allow the gluten to swell for at least 2 hours (you can leave it overnight). After this, the dough becomes elastic, doesn't tear when rolled out, and is easy to shape into dumplings.

    Cut the zucchini into small cubes, about 5 mm each. Finely chop the garlic. Add nutmeg, salt, and pepper to taste. Lightly grease a frying pan with vegetable oil and heat it up. Simmer the vegetables until tender, covered, over low heat for about 5 minutes.

    Dust the work surface with flour. Divide the dough into 4 parts, roll each part into a sausage shape, and cut into equal pieces. Roll each piece into a round flatbread, place 1 tsp of filling in the center. Fold the flatbread in half, seal the edges well, and join the ends together.

    Drop the dumplings into boiling salted water and cook for 4-5 minutes after they float to the surface.
