
Vegetarian Enchiladas
Description
The recipe won't take much time. Enchiladas are one of the traditional Mexican dishes, based on a corn flatbread with filling. The corn flatbread is called a tortilla, and Mexican cuisine is unimaginable without it. It's something like our bread in importance, and even more so. Mexicans adore tortillas and can't imagine life without them. The filling for enchiladas can be either meat or vegetable. The snack is ready. Serve immediately.

1. On the grill, sear the sliced mushrooms, zucchini, and eggplant, drizzling them with oil and seasoning with salt and pepper to taste.

2. Also grill the onions on the grill.
